Smoking Turkey

A few weeks back the neighborhood decided it was time for a summer day turkey smoke. My husband loves to smoke things and the fact that we usually have a Thanksgiving turkey or two in the freezer at all times makes it rather convenient.

A week of defrosting and presto! A raw, lovely turkey just waiting for all its seasoning goodness.

After being washed and dried, I sprinkled liberally with salt and pepper:

{A word on pepper: our family really, really, really, really loves Tellicherry Peppercorns. Yes, we all know you can get the pre-ground stuff from a easy to use box in the grocery but really, does it taste good to you? Using a good peppercorn and grinding it yourself can elevate the simplest of dishes to a gourmet level – even a plate of scrambled eggs can be amazing with the right seasoning. So please, try it, I really hope you do and please leave me a comment and let me know what you thought of real pepper!}

Back to my turkey…

Drizzled with olive oil, salt and pepper and a bit of brown sugar for sweetness and carmalization. This was a last minute addition and boy was I happy I did it. It made it great!

Rub, rub, rub…

And into the smoker it goes!

I suggest you remember to truss it up BEFORE you put it in the smoker so you don’t end up doing this:

So now we waited, and while the lovely bird smoked we played!

And after a few hours, we ate!!
